The dish quickly spread around the Sichuan province, where it was named in honor of the dish’s most ardent fan, “Ding Baozhen,” Kung Pao is actually the honorable official title of Ding Baozhen. He began eating it on a regular basis and serving it to his own guests. He liked the flavor, and he asked the family chef for the recipe. Others have speculated that while visiting his home, Ding Baozhen was served a dish featuring diced chicken, peanuts, and spicy Sichuan peppercorns. This was only one account of how Kung Pao Chicken was first created. Kung Pao Chicken was originally a private home cuisine of Ding family, but as time passed it became a well-known dish. He created a delicacy made of diced chicken, red pepper, and peanuts while in the kitchen. He liked eating chicken and peanuts, and especially loved spicy flavors. Ding Baozhen was very interested in cooking. Legend has it that that the dish was created by Ding Baozhen, a governor of the Sichuan province during the Qing Dynasty. The history of Kung Pao Chicken is very interesting. To dive in deeper to the Chinese cooking and eating culture, we focused on the delectable dish of Kung Pao Chicken because it is a good example of a traditional dish that starkly contrasts the Americanized Chinese food that is common today.

First, there are the dumplings which are a northern food, and then a stir-fry, which is a more southern example of Chinese cuisine. This coincidentally coincides with the food we cooked in class. In the north, they are primarily wheat-eaters, with dishes like “noodles, dumplings, and breads” that accompany or consist of meat and vegetables whereas, in the south it is more common that dishes are made separately to be served with rice. Instead of the common American greeting, “Hi, how are you?” people remark, “Have you eaten yet?” as a way of asking someone about their welfare that relates to the significance they place on eating.Ĭhina is not homogenous in its cuisine because there are various “traditions of cooking and deliciously distinct regional cuisines influenced by history, geography, and climate” that vary depending on where you are (north or south) and whether it is rural or urban. The first thing we associate with Chinese food are those take out boxes full of noodles, rice, maybe chicken or beef, and stir-fry dripping in sauce. One of the myths that has been debunked throughout this course is the American perception of Chinese food.
